It is a Valencian rice dish. Paella has ancient roots, but its modern form originated in the mid-19th century, near the Albufera lagoon, on the east coast of Spain adjacent to the city of Valencia.
It consists of red wine and chopped fruit, usually with other ingredients such as orange juice or brandy.
Is an appetizer, or snack. It can be cold (such as mixed olives and cheese) or hot (such as chopitos, which are battered, fried baby squid). In select bars in Spain, tapas have evolved into an entire, sophisticated cuisine.
